I’ve been getting some rather persistent requests for this recipe, so here it is ya’ll (today i’m southern).
Brown 2 lbs of ground meat (choose what you like, if you eat lean meats use turkey or chicken, I used 1 lb organic beef, 1 lb organic pork cuz that’s how we roll. You can even just do 1 lb of meat and then mix in a cup or so of cooked brown rice if that’s how you roll.)
After meat is browned, mix in 1 can tomato paste and one can diced tomatoes (I use the kind that is already seasoned with italian seasoning, but there are all kinds of selections, you can go with just straight up tomato and add your own seasoning so you have more control over sodium content too)
Then I add a half can of sliced black olives and a can of mushrooms, but that is completely up to you. Some times i’ll brown onions with the meat too, just depends on the day, how much time I have etc.
Okay, so after you have all this meaty goodness mixed together you spoon it into some peppers that have been decapitated. Then I add a lil parmesan cheese on top.  I love my crocky pot, so i stick them in my crockpot at lunch time on low, and when we get home the peppers are nice and soft and ready for Tiki & Elf consumption. No need to add water, the peppers sweat. If you wanna cook them in the oven, i’d put them in a baking dish with a half inch of water and cover them with foil for about an hour at 375.
